Mandarin Orange Savory Salad #TropicalFruit

Summertime around our house means lots of salads, lots of fruits and vegetables, and lots of refreshing ingredients.

When I was given the recipe for Classic Mandarin Orange Salad, I knew my family would love it.  And they have ... we ate it three times in one week!


Kennedy, Tate, and I went on a little Tom Thumb {my Safeway affiliate} shopping errand to get the ingredients I needed for the recipe.  You can see that full path to purchase shop here.


This salad is light and refreshing and makes a perfect lunch-time meal {we added rolls and a summery drink on the side} or a healthy {and colorful} side dish for an evening meal.

To make it, you'll need:
1/2 pound of spinach or another lettuce variety {I just used a full package}
1 can of Dole mandarin oranges
1/4 cup sliced ripe olives {I used one small can}
1/2 cup sliced red onion {I sliced it the first time but diced it the other two times ... it blended into the salad a bit better that way and the kids actually ate it}
1/2 cup light balsamic vinaigrette
1/4 cup crumbled feta cheese 



Combine the spinach, mandarin oranges, olives, and red onion in a bowl.


Pour the vinaigrette evenly over the salad and toss to coat.  Sprinkle with feta cheese.


My mouth waters just thinking about this delicious savory salad.

I'm planning to make it again with a few variations ... some grilled chicken, sunflowers seeds, or even a can of tropical fruit instead of oranges.
