Minty Peach Iced Tea

Summertime at our house means fun refreshments and the more mint we can use, the better.  The mint crop is alive and well {and it's taken over the whole garden as I hoped it would}!

Real Simple recently shared a recipe for iced tea with peach and mint but I decided to alter it, hoping to draw out a bit more of the flavors.

I used eight tea bags, one peach {roughly chopped}, and one cup of very-packed mint {I throw in the stems and all, not just leaves}.

I poured eight cups of boiling water over all of it and allowed it to steep for an hour or so.

The result was a minty iced tea with a hint of peach flavoring.  For stronger flavor, add another peach or two to the brew.  You could also add a bit of sugar if you like your tea on the sweet side.

What's your favorite summertime drink?
