Some nights you need a super easy dinner idea and last night we had the best easy dinner: woven bacon BLT sandwiches made with buffalo flavored bacon! They were so simple to make but absolutely delicious and I’m going to tell you how we made them and why weaving the bacon is the key to a great BLT!
We were inspired by a Sunday afternoon trip to Sam’s Club where my little guy, Luke, got to meet former Dallas Cowboys defensive tackle, Chad Hennings. Luke got his autograph on a card as well as on his Cowboys jersey … a pretty cool afternoon for a six year old!
While we were there, we got to sample a BLT made with buffalo flavor Wright Bacon and Mrs. Baird’s bread. It was so good that I bought all the ingredients and came right home to make BLT’s for dinner!
I did something a bit fun with the bacon this time around. Instead of cooking it and adding bacon strips to the sandwich, I wove the bacon together before cooking.
I cut the bacon strips in half and wove them into squares then baked them at 425 degrees until they were fully cooked, about 15-20 minutes for thick bacon.
Weaving the bacon together keeps it from falling out of the sandwich as you’re eating so you can get all the flavor of a BLT in every bite. Plus, it looks pretty impressive {wink}!
When the bacon was cooked, I assembled delicious bacon sandwiches: mayo slathered on the bread {you can add salt and pepper, garlic powder, or basil to jazz up the mayo a bit}, shredded lettuce, sliced tomatoes, and Wright Bacon. For a sturdier sandwich, toast the bread before assembling the sandwiches.
This Buffalo Flavor bacon is a new favorite … the tangy, barely spicy flavor is an amazing addition to a BLT. Wright Bacon is also thick, meaty bacon with far less fat than any bacon I’ve bought recently. It’s a hit with everyone in the family.
But don’t worry if you can’t find buffalo flavor … any bacon is perfect in a BLT!
These sandwiches were savory and delicious and I’m so glad I bought some extra bacon. We’ll be making these again soon … perfect football food for the big game!

Oh my gosh. I love ANYTHING with bacon and this is definitely one of the best bacon recipes I’ve seen in awhile. I’m going to try that basket weaving technique the next time I make bacon. Maybe my husband will be impressed!
