Summer is not the time that I want to do a lot of heavy cooking or heat up the house with the oven so this recipe for grilled tortilla pizzas is one of my favorites. This pizza recipe came from a friend of mine and she agreed to let me share it here after we tried these at her house and fell in love. The only downfall is that it takes a lot of time to grill enough pizzas to feed our big family {plan on one or two tortilla pizzas per person since they’re quite thin} but if you don’t mind standing around the grill, this is the perfect summer recipe!
To make these grilled tortilla pizzas, you’ll need tortillas, chicken breasts, salt and pepper, garlic powder, fresh basil, flavored garlic and herb cream cheese {or another flavor, if you prefer}, and mozzarella cheese.

You simply season and grill the chicken, chop it up alongside the fresh basil {this is a great way to use basil you might be growing in your summer garden} …
… then grill the tortillas, one side only, until they’re slightly crispy with grill lines on them.
Spread the grilled side of the tortilla with flavored cream cheese then add the grilled chicken, basil, and cheese, and grill for a few minutes more until the cheese melts.
These are so delicious and perfect for outdoor entertaining since guests can grab their pizzas as they’re ready and continue with time in the pool or outdoor fun while the pizzas are cooking.

Grilled Tortilla Pizzas
Savory chicken tortilla pizzas made on an outdoor grill.
Ingredients
- 1 chicken breast
- 2 tortillas
- salt
- pepper
- garlic powder
- 1/2 cup fresh basil, chopped
- 1/4 cup garlic and herb flavored cream cheese
- 1 cup mozzarella cheese, shredded
Instructions
- Sprinkle the chicken with salt, pepper, and garlic powder, and grill until fully cooked. Chop and set aside.
- Grill the tortillas, one side only, until crisp with grill marks.
- Spread the flavored cream cheese over the cooked side of the tortilla then sprinkle with the chopped chicken, fresh basil, and mozzarella cheese.
- Place on the grill and cook until the cheese has melted.
- Cut in half or in slices and serve.
