A Favorite :: Crab Pasta Salad

Kennedy and I have a cold pasta salad that we absolutely love!  Like, love so much we could eat the entire {huge} bowl ourselves.  I can't believe I haven't shared it here before.  It's such a cool summer meal!


Cold Crab Pasta Salad
{from Crazy Plates}

1/2 cup low-fat sour cream
1/2 cup low-fat mayonnaise
1 tablespoon lemon juice
1 tablespoon honey mustard
1 tablespoon minced, fresh dill
1/2 teaspoon salt
1/4 teaspoon black pepper
12-16 ounces medium shell pasta, uncooked
1 pound lump crabmeat, real or imitation, chopped
1/2 cup diced red bell pepper
1/2 cup diced green bell pepper
1/2 cup chopped green onions

In a small bowl, combine sour cream, mayonnaise, lemon juice, honey mustard, dill, salt, and pepper.  Refrigerate dressing until ready to use.

Cook shells according to package directions.  Drain well.  Rinse with cold water and drain again.  Transfer pasta to a large bowl.  Add crabmeat, bell peppers, onion, and dressing.  Mix well.  Cover and refrigerate until ready to serve.

Yum!  It makes my mouth water just thinking about it.  Might have to make it again this week!
