Peach Waffles

It's Waffle Saturday at our house.  Since we started this tradition, we've had a different kind of waffle every week.  Today:  Peach Waffles with Chai Syrup.  Does that sound good to you?  I thought it sounded amazing when I saw it here but a few friends on facebook have given it a thumbs down.  Maybe it was the side of turkey bacon that got the bad vote.  Let me tell you, these waffles were goooood.




Peach Waffles with Chai Syrup

2 15 ounce cans peach slices {I used light}
1/2 cup whipping cream
2 eggs, lightly beaten
1 1/2 cups whole wheat flour
1 cup all-purpose flour
1/3 cup packed dark brown sugar
2 teaspoons baking powder
1 1/4 teaspoons ground ginger
1 1/4 teaspoons ground cinnamon
1 teaspoon salt

Drain peaches; reserve 1 cup juice.  In blender, process peaches until smooth.  Transfer to bowl; stir in cream and eggs; set aside.

In large bowl, combine flours, brown sugar, baking powder, spices, and salt.  Add peach mixture.  Stir just until moistened.  Cook according to waffle maker instructions.  Serve with chai syrup and chopped peaches {and a little whipped cream if you live at our house}.

Chai Syrup:  Cook and stir reserved juice, 1/4 cup water, 1/4 cup packed brown sugar, and 2 teaspoons cornstarch over medium-low.  Add 2 spiced chai-flavor black tea bags; cook and stir over medium until slightly thickened; cook and stir 1 minute.  Discard tea bags.  {I strained the syrup before serving to eliminate some of the pulp that was in the peach juice.}

  1. I don't think it sounds bad. I just wondered whatever happened to plain waffles and Aunt Jemima syrup? You are so adventuresome.
